It is hard to go wrong with a casserole dish purchase. A well-stocked kitchen should have casseroles of various sizes and shapes, so experiment with different types and styles. A tight-fitting lid is important, especially if you plan to tote the dish to potlucks or gatherings. The lid should be molded to fit firmly in place. Because these dishes are meant for serving, handles on opposite sides make it easy to lift the dish from oven to table.

Function

Because casserole dishes are nonmetal, they are perfect for baking acidic foods such as tomato-based lasagna and citrus-sauced poultry or fish. Check the label to determine if the dish is oven-, microwave-, freezer-, and/or broiler-safe.

Shapes and Sizes

Casseroles come in round, square, rectangular, and oval shapes, and they range in capacity from about 1 quart to more than 6 quarts. The most common sizes called for in recipes are 1-1/2-, 2-, and 3-quart. Because recipes call for a specific shape and capacity, it's best to have an assortment of casseroles on hand.

Available as clear glass and basic white or brightly colored stoneware, ceramic, or enamel-coated cast iron, casserole dishes allow you to add a punch of color to your kitchenware.

Weight

The larger the casserole, the more food it can hold. When purchasing a large casserole for big-batch cooking, choose one that is not too heavy so you can lift it comfortably when it's full of food.

Handles

Handles on opposite sides of the dish are beneficial for easy transfer from oven to table. The handles should be large enough to grab easily when using pot holders.
