Braisers Buying Guide

This versatile, medium-height round pan with a dishlike shape is commonly used for braising, slow-cooking, and poaching. Because braising requires less liquid than stewing, the sides of the pan are shallower than those of a Dutch oven. The braiser is designed to keep foods moist while cooking, so a tight-fitting lid is key. Without the lid, the pan can be used on the stovetop as a saute pan or in the oven as a baker.

The beauty of a braiser is that it keeps moisture in by capturing the juices from cooking foods and trapping it in the lidded pan while it cooks or bakes.

Enamel-Coated Cast Iron

An enamel-coated cast-iron braiser is heavy and slow to heat, but it does offer even browning and cooking. Once removed from the stovetop or oven, it holds heat longer, making it ideal for buffet-style dinners.
