This versatile, medium-height round pan with a dishlike shape is commonly used for braising, slow-cooking, and poaching. Because braising requires less liquid than stewing, the sides of the pan are shallower than those of a Dutch oven. The braiser is designed to keep foods moist while cooking, so a tight-fitting lid is key. Without the lid, the pan can be used on the stovetop as a saute pan or in the oven as a baker.

Before purchasing a braiser, decide how you will most often use it. If you tend to cook for many, consider a larger braiser for big-batch cooking. Materials

Lids

Braiser lids should be heavy and tight-fitting to seal in moisture and yield tender, flavorful meals.

Handles

Be sure the two handles are sturdy and solid, as they are used for lifting the pot in and out of the oven. If they are flimsy, they could pose a safety hazard.
