A baking pan refers to a metal pan, usually aluminum, and it can be nonstick or not. Metal baking pans, especially aluminum, are preferred over glass baking dishes for items such as cakes, yeast breads, quick breads, and more. Aluminum pans are lightweight and conduct heat well, resulting in even baking as well as browning. They're also a good choice for broiling, as high temperatures won't cause issues like those common with glass or ceramic pans.

Purchase Considerations

When buying baking pans, start with the essentials and continue to add to your collection over time. If nothing else, a 13x9x2-inch rectangular pan will be the hero of your kitchen, and you definitely want more than one. The biggest decision you will have when selecting baking pans is whether you want nonstick coating.

Material

Baking pans are in available in a variety of materials, including aluminum, stainless steel, and even paper. Aluminum—nonstick or not—is a good choice for basic bakeware. It is lightweight and conducts heat well, ensuring even baking and browning. Know that shiny pans will reflect heat, slowing the browning process, and dark- and dull-finish baking pans will absorb more heat, which increases browning.

Quality

Basic baking pans are the go-tos when making bar cookies, baking bread, and more, so go for quality. Thin or flimsy pans do not heat as evenly as those that are thicker and of better quality.

Nonstick

Nonstick coating can ease cleanup, but because some nonstick surfaces are dark, foods may brown more quickly. Also, cutting baked goods in coated pans is not recommended because a knife will scratch the coating.

Miniature

Mini- or individual-size pizza pans and bread pans are available. Make sure you have enough of the small pans on hand to bake all the batter at once. Unless the recipe is designed for minis, you will need to adjust the baking time.

Lids

Some brands of 13x9x2-inch baking pans and jelly roll pans offer snap-on lids. A lid is a nice option for baking and storing food in the same pan.
