One of the first decisions you need to make before shopping for a range is what type of fuel best suits your cooking style and installation needs. Gas, electric, induction, and dual-fuel all have distinct advantages, but the costs vary widely. Which model you choose will primarily be a matter of personal preference and budget. Thirty-inch-wide ranges are the most common, and many come with plenty of bells and whistles; 48- and 60-inch-wide professional-style ranges provide even more cooking space and gourmet features.

Gas Ranges

Many serious cooks prefer gas ranges because they can see the flame and more precisely control the temperature of cooktop burners. Gas ovens help food retain moisture, but it may be necessary to rotate food to ensure even cooking. Gas cooktops generally have four or five burners with various heat outputs (measured in British thermal units, or Btus). Opt for a model with sealed burners for easier cleanup.

As you shop for a range, look for a model that balances convenience, safety, and style. Ranges are available in a variety of sizes and with finished or unfinished sides, so it's best to know where you plan to install the range before shopping. Consider how often you cook and how much oven space you will need to handle everyday meals and large gatherings.

Installation

Ranges can be freestanding with finished sides or slide-in models with an unfinished back and sides. Freestanding ranges are typically installed between two countertops with their back to a wall, but they can have one or both sides exposed. Freestanding ranges are the most economical, and since their size has been standardized for years, they are easy to replace without remodeling your kitchen. Slide-in ranges offer a built-in look; because they don't have a rear control panel or back console (controls are on the front), they work well in island installations or when there is a decorative backsplash behind the range. Slide-in ranges feature a cooktop that's slightly wider than the body of the range so crumbs don't fall between the range and the countertop edges.

Size

Carefully measure the area where you plan to install the range, and choose a unit accordingly. Most traditional ranges -- with four burners and an oven below -- are 30 inches wide, but 24- and 36-inch models are readily available. Professional-style ranges -- with six burners and two ovens -- are typically 48 or 60 inches wide.

Finish

Stainless steel is a popular finish, but white and black models are also common. Some higher-price ranges are available in bold colors designed to be the focal point of the room.

Convenience

When shopping, focus on features that will streamline regular cooking tasks. Look for models with at least one high-power burner so you can quickly boil water. If you cook often, you may also want a low-power burner for simmering. Electric models include expandable elements that allow you to match the size of your pot or pan. A raised edge around the cooktop can help contain spills. Some ovens include a delay-start option that lets you set a time for the oven to turn on, but remember that an oven shouldn't be left unattended, and food shouldn't sit in a cold oven for long.

Safety

Look for models with hot-surface indicator lights that alert you to a burner that is on or a surface that is still hot. Make sure controls are placed where they are easy to reach and view; electronic controls offer more precise control over oven temperatures, but front-mount controls can be easily bumped and reset accidentally.
