Making perfect risotto is easy if you follow these rules:
- Pick the right rice. Arborio rice is ideal because it is high in starch -- which contributes to the creamy quality of risotto -- and it absorbs a lot of liquid without losing its shape.
- Stir constantly. Stirring is important because it keeps the rice from sticking and helps the rice absorb the hot liquid evenly.
- Add the hot liquid to the rice in batches, and add the next batch only after the previous batch has been absorbed. This slow addition of liquid ensures a perfect risotto texture -- luxuriously creamy, with grains that are firm to the bite.
