Stewing is a cooking technique perfectly suited for when you want to make the most of less expensive, tougher cuts of meat, such as beef chuck or round.

Stewing softens the tough fibers

Stewing simply means to cook food in liquid in a covered pot for a long time. You can stew meats either on the range-top or in the oven. The long, slow, moist cooking softens the tough fibers of the meat, making it tender, juicy, and delicious. Naturally tender cuts, such as most steaks, however, don't require this sort of cooking. That's why they often are grilled, broiled, or pan-fried for a short period of time.
