This seaside-inspired menu of Oyster Stew, Wedge of Lettuce with Dill Dressing, Corn Biscuits, and Strawberries and Shortbread will remind you of a day at the beach. Start the biscuits first -- it only takes 20 minutes start to finish for the stew.
Add chopped fresh dill to creamy dressing and spoon over a wedge of lettuce, one per plate. Iceberg and Boston lettuce varieties are good choices.
Using all-purpose baking mix, prepare drop biscuits according to directions on back of box; stir a small can of drained corn into mix before adding wet ingredients
Look for Scottish shortbread cookies in the gourmet aisle if they aren't with the regular cookies. Serve with fresh strawberries.
