Mexican Chipotle Black Bean Soup Dinner

Stir chipotle pepper sauce into ranch dressing to taste. Dice avocadoes and tomatoes and gently coat with dressing.
Prepare a package of corn muffin mix according to directions. Stir shredded pepper-jack cheese into dry ingredients before mixing with wet.
In a small saucepan, boil 1 part water and 3 parts sugar. When sugar dissolves, add a handful of fresh mint leaves; boil 3 minutes more. Strain and drizzle over fruit.
