A rotisserie chicken from the grocery store or wholesale club is just the thing to make this dinner quick.
Look for premade potatoes in the freezer section. If you can't find them, microwave medium-size potatoes until cooked through. Cut in half and scoop out potato. Mash in a bowl and stir in salt, pepper, butter, sour cream, and sliced green onion. Fill potato skins with mixture, top with cheese if desired. Bake or microwave to heat through.
Slice radishes and scallions and toss with spinach. Toss with your favorite dressing.
