Baby Potato Soup Dinner

New Potato Simmer is so yummy with tiny baby potatoes -- look for them in small bags in the produce department. The soup becomes a dinner when served with Crudites and Dip and a new twist on an old favorite: ALTs -- Avocado, Lettuce, and Tomato Sandwiches. The avocado replaces the "B" for bacon in a BLT. Finish it off with Apple Turnovers for a great All-American meal.
Cut up vegetables or pick them up in the produce aisle. Serve with your family's favorite dip.
Toast whole wheat bread, spread with mayonnaise, and fill with lettuce, sliced tomatoes, and avocado. Season with salt and pepper if desired.
Heat oven to 375 degrees F. Open a package of grand-size refrigerator biscuits and flatten them slightly. Fill each with 1 Tbs. apple pie filling and then fold over and seal. Place on a foil-lined cookie sheet and bake until puffed and golden brown, about 10 to 15 minutes.
