Vegetarian Chili Dinner

A Mexican meal is a snap with quick-cooking Vegetarian Chili, Nachos, a Bowl of Mix-Ins: Sliced Green Onion and Diced Avocado. Sweet Tortilla Cup Sundaes make a delicious dessert. Flour tortillas bake in the oven while you get the rest of dinner ready. Have everyone grab a handful of nachos while one of the kids helps set the table.
Spread tortilla chips on a foil-lined cookie sheet and sprinkle with cheese. Broil to melt cheese.
Fill individual bowl with chili mix-ins: Sliced green onions, shredded cheese, diced avocados, sour cream, etc.
Heat oven to 350 degrees F. Microwave small flour tortillas for 15 seconds to soften. Sprinkle with cinnamon sugar and place in nonstick muffin pan, pushing them in to form cups. Bake 8 to 10 minutes. Cool; fill with ice cream, and top with chocolate sauce.
