Italian Sausage and Bean Stew Dinner

A menu that includes Italian Sausage-Bean Stew, Radicchio and Belgian Endive Salad, Gorgonzola Blue Cheese Croustades, and Roast Butternut Squash will either make your family remember a vacation you had in Italy, or want one. Most produce departments stock precut, peeled butternut squash -- it makes prep time so much faster.
Slice radicchio and endives and toss with your favorite creamy or vinaigrette dressing.
Mix equal parts Gorgonzola and softened butter. Toast small rounds of crusty bread; spread with cheese mixture. Sprinkle with black pepper if desired.
Toss small cubes of squash with olive oil, salt, and pepper and place on a cookie sheet. Roast at 375 degrees F. until tender and starting to brown, about 40 minutes.
