Irish Lamb Stew Dinner

Irish cuisine is known for lamb, oats, and soda bread. Here you can get all three in one dinner. Mock soda bread is so easy to make using off-the-shelf baking mix and raisins, and Oatmeal Ice Cream Sandwiches are a fun way to have some oats. Top spinach salad with thinly sliced red onion and crumbled cooked bacon. Toss with your favorite bottled red wine vinegar dressing, or make your own: 1 part red wine vinegar, a pinch of salt and sugar, and 3 parts olive oil.
Follow biscuit directions on a box of all-purpose baking mix. Stir in raisins before adding liquid, and substitute half-and-half for milk. Bake as directed.
Soft oatmeal cookies make great ice cream sandwiches. Vanilla is always popular, but use whatever you prefer.
