This easy dinner has lots of flavor. Rubbing crusty toast with fresh tomato is great before the main meal: Spicy Chicken with Peppers and Olives, Garlicky Kale, and Basil Pasta. Spicy Chicken with Peppers and Olives
Toast crusty bread and rub with a cut tomato. Season to taste.
This pasta is so easy to make -- just heat olive oil a pan, turn off heat, add chopped fresh basil, and toss with cooked pasta. Season to taste with salt and pepper and a sprinkle of Parmesan cheese if desired.
In a large skillet, heat olive oil over medium heat and add minced garlic. Cook just until garlic bubbles at the edges. Stir in a package of thawed and drained frozen kale. Cook 10 minutes, adding water if kale begins to stick to pan. Add a dash of red wine vinegar or lemon juice at the last minute.
