Italian Spicy Chicken Dinner

Make weeknight dinner fast and easy. Here's a main course recipe and three suggestions for rounding it out into a complete meal. Find out how to effortlessly dress up starters, sides, and desserts to fit the meal's main course.

This easy dinner has lots of flavor. Rubbing crusty toast with fresh tomato is great before the main meal: Spicy Chicken with Peppers and Olives, Garlicky Kale, and Basil Pasta. The chicken is a snap in the slow cooker. You can get everything else cooked and ready in the amount of time it takes for the pasta to cook.


The Menu
  • Spicy Chicken with Peppers and Olives (see recipe below)
  • Tomato-Rubbed Croustades
  • Basil Pasta
  • Garlic Kale

Spicy Chicken with Peppers and Olives


Tomato-Rubbed Croustades

Toast crusty bread and rub with a cut tomato. Season to taste.


Basil Pasta

This pasta is so easy to make -- just heat olive oil a pan, turn off heat, add chopped fresh basil, and toss with cooked pasta. Season to taste with salt and pepper and a sprinkle of Parmesan cheese if desired.


Garlic Kale

In a large skillet, heat olive oil over medium heat and add minced garlic. Cook just until garlic bubbles at the edges. Stir in a package of thawed and drained frozen kale. Cook 10 minutes, adding water if kale begins to stick to pan. Add a dash of red wine vinegar or lemon juice at the last minute.
