Keeping a bag of peppers to stir-fry or saute is a great freezer option. They add a lot of color and flavor to this slow-cooker meal of Chicken with Vegetables. You can slice and saute any sweet pepper in olive oil with garlic. Or buy a bag of stir-fry peppers all ready to go, and prepare according to package directions.
Puree a 5-ounce package of fresh spinach in a blender with a jar of marinara sauce. Serve over cooked spinach fettuccine.
Toss sliced radicchio with your favorite vinaigrette. Shave Parmesan cheese with a vegetable peeler and sprinkle over the top of the dressed salad.
