Keeping a bag of peppers to stir-fry or saute is a great freezer option. They add a lot of color and flavor to this slow-cooker meal of Chicken with Vegetables. Double Spinach Fettuccine is loaded with goodness: spinach in the pasta and the sauce. The Radicchio and Parmesan salad adds even more colorful vegetables to this dinner.

Sauteed Peppers

You can slice and saute any sweet pepper in olive oil with garlic. Or buy a bag of stir-fry peppers all ready to go, and prepare according to package directions.

Double Spinach Fettuccine

Puree a 5-ounce package of fresh spinach in a blender with a jar of marinara sauce. Serve over cooked spinach fettuccine.

Radicchio and Parmesan Salad

Toss sliced radicchio with your favorite vinaigrette. Shave Parmesan cheese with a vegetable peeler and sprinkle over the top of the dressed salad.
