Mexican Spicy Beef Burrito Dinner

It's easy to get the real flavors of Mexico in your kitchen with this menu. Chipotle peppers add the spice to the beef, cilantro livens up the avocado, and salsa gives a kick to the rice. Ice cream with sweet tortillas for dessert cools it off.

Gently stir together diced avocadoes, lime juice, and cilantro. (Do not overstir, or the avocado will lose its shape.) Place on a large leaf of lettuce to serve.
Warm your favorite salsa in the microwave and stir into hot cooked white or brown rice.
Cut fresh flour tortillas into wedges and spray with vegetable cooking spray. Bake on a cookie sheet in a 350-degree oven until crisp, about 8 minutes. Sprinkle with cinnamon sugar and serve with vanilla ice cream.
