Barbecue Beef Sandwich Dinner

A slow cooker is great for weeknight dinners, and this barbecue recipe makes a great midweek dinner with a few simple sides. Romaine lettuce with tomatoes, oven ranch fries, and lemon sorbet with mint make any time of year feel like summer. Keeping dressing mix in the pantry means you can make these potatoes any time.
Cut russet potatoes into thin wedges and toss with vegetable oil. Sprinkle with dry ranch dressing mix powder and bake on a greased cookie sheet in a 375-degree oven until golden brown and cooked through -- about 35 minutes.
Add wedges of tomato to romaine lettuce salad and toss with your favorite dressing. If you'd like to try a new dressing, cool, creamy green goddess goes well with this menu.
Scoops of lemon sorbet (or sherbet) topped with fresh mint (available year round) is a great cool ending to this summer-like meal.
