Chicken and Roasted Pepper Sandwiches have an Italian panini-style flavor. The recipe uses an indoor grill, but you can adapt it to outdoor grilling easily. Add Grilled Beefsteak Tomatoes with Parmesan, Potato Salad with Peas, and Fruit with Honey Cream for a complete Mediterranean feast. Deli potato salad and frozen peas are true time-savers for the salad.
Slice tomatoes into 1/2-inch-thick slices. Brush with oil and grill. Transfer to platter, sprinkle with pepper, and top with shredded Parmesan.
To quickly thaw peas, rinse under hot water in a sieve or colander. Stir into creamy deli potato salad.
Whip cream until barely stiff, add honey to taste, and whip for just a few more seconds. Serve with berries or fruit.
