1. In a 3- to 4-quart saucepan, combine water and shiitakes; bring to a boil. Remove from heat and let soak for 20 minutes. With a slotted spoon, remove shiitakes from water and set aside. Add chicken broth to the shiitake-water and bring to a boil. Immerse bags of rice in broth; boil, uncovered, for 10 minutes.
2. While rice is boiling, slice shiitakes. When rice is done, carefully remove bags from pot. Cut open bags and pour rice into a medium mixing bowl. Add sliced shiitakes, green onions, and soy sauce. Toss to combine. Makes 4 servings.
