1. In a blender, combine the mint, water, sugar and limeade concentrate. Cover and blend until evenly combined and mint is blended into small pieces.
2. Place blended mixture in a saucepan and bring to boiling, stirring to dissolve sugar completely. Remove from heat. Stir in the bourbon until well combined.
3. Pour mixture into a shallow dish and freeze overnight or until completely frozen. Scoop to serve.
