Cuban Burgers

Makes: 4 servings
Serving size: 1 burger + 2 tablespoons sauce

Cuban Burgers
Ingredients
  • 1  pound  ground beef
  • 1  teaspoon  garlic powder
  • 1/2  teaspoon  ground cumin
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  black pepper
  • 4  thin slices  cooked ham (about 3 ounces)
  • 4  slices  Fontina or provolone cheese (about 3 ounces)
  • 4  thick slices  French bread or hamburger buns, toasted
  • 2  whole dill pickles, sliced horizontally into 8 slices
  • 4  slices  red onion
  • 4  slices  tomato (optional)
  • 1  recipe  Mojo Sauce
Directions

1. In a large bowl combine beef, garlic powder, cumin, salt, and pepper; mix well. Shape into four 3/4-inch-thick patties.

2. For a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until done (160 degrees F), turning once halfway through grilling. Add a slice of ham and cheese to each burger the last 1 minute of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as directed.)

3. Serve burgers on bread slices with pickles, onion, and, if desired, tomato. Drizzle with some of the Mojo Sauce sauce; pass remaining sauce.

Mojo Sauce

Ingredients
  • 6  cloves garlic, minced
  • 2  tablespoons  olive oil
  • 1/3  cup  orange juice
  • 1/3  cup  lemon juice
  • 1  teaspoon  ground cumin
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  ground black pepper
Directions

1. In a medium skillet cook minced garlic in olive oil over medium heat until just starting to brown. Remove from heat. Carefully add orange juice, lemon juice, ground cumin, salt, and black pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until slightly reduced. Remove from heat; cool. Whisk before serving.
