Egg Salad Wraps

Egg Salad Wraps
Ingredients
  • 2  tablespoons  snipped fresh chives or thinly sliced green onion tops
  • 2  tablespoons  fat-free sour cream
  • 2  tablespoons  light mayonnaise or salad dressing
  • 2 - 3  teaspoons  capers, rinsed and drained (optional)
  • 4  hard-cooked eggs, coarsely chopped
  • 1/2  cup  chopped red sweet pepper (1 small)
  • 1/2  cup  packaged coarsely shredded carrots
  • 8  large  butterhead (Boston or bibb) lettuce leaves
Directions

1. In a medium bowl combine chives, sour cream, mayonnaise, and, if desired, capers. Stir in eggs, sweet pepper, and carrots.

2. Spoon egg mixture evenly onto lettuce leaves. Leave open-face or roll up leaves. If necessary, secure with toothpicks or cocktail picks.
