Honey, Prosciutto, and Kale Topped Sweets

Makes: 4 servings Yield: about 1/2 cup potatoes and 1/4 cup kale mixture each

Sweet Potatoes with Honey, Prosciutto, and Kale
Ingredients
  • 1  pound  sweet potatoes
  • 1/4  cup  water
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  ground black pepper
  • 1  tablespoon  olive oil
  • 4  cups  coarsely chopped fresh kale
  • 2  tablespoons  chopped shallot (1 medium)
  • 1  ounce  thinly sliced prosciutto, chopped
  • 1 - 2  tablespoons  honey
Directions

1. Preheat oven to 375 degrees F. Peel sweet potatoes; cut crosswise into 1/4-inch slices. Arrange sweet potatoes in a 2-quart square baking dish. Add the water; sprinkle with salt and pepper. Bake, covered, about 30 minutes or until potatoes are tender; drain.

2. In a large skillet heat oil over medium heat. Add kale and shallot. Cook for 3 to 5 minutes or until kale is tender, stirring occasionally. Add prosciutto and honey. Cook and stir about 1 minute more or until mixture is evenly coated with honey and heated through. Serve kale mixture over potatoes.
