Italian Turkey Salad

Italian Turkey Salad
Ingredients
  • 1 2/3  cups  Italian blend mixed salad greens
  • 5  ounces  thinly sliced reduced-sodium deli turkey, cut into bite-size pieces, or tofu (fresh bean curd), cut into bite-size pieces
  • 1  yellow sweet pepper, stemmed, seeded, and sliced into rings
  • 5  cherry tomatoes, halved
  • 4  teaspoons  chopped green onion
  • 4  teaspoons  grapeseed oil
  • 4  teaspoons  balsamic vinegar
  • 2  teaspoons  snipped fresh basil
  • 2  teaspoons  lemon juice
  • 1/8  teaspoon  salt
  • 1/8  teaspoon  ground black pepper
Directions

1. In a large bowl combine salad greens, turkey, sweet pepper, cherry tomatoes, and green onion.

2. For dressing, in a small bowl whisk together grapeseed oil, vinegar, basil, lemon juice, salt, and black pepper. Pour dressing over salad; toss to coat. Serve immediately.
