1. Lightly spread one side of bread slices with butter. Spread other side of bread slices with mustard. Top the mustard sides of four of the bread slices with cheese. Top with the remaining four bread slices, mustard sides down.
2. Preheat a large skillet over medium heat. Place the sandwiches in the skillet. If using a covered grill, close lid. Grill sandwiches until bread is golden and cheese is melted, turning once halfway through cooking.
