Harvest Succotash
Ingredients
  • 2  slices  bacon, chopped
  • 1  clove  garlic, sliced
  • 4  cups  finely chopped mustard greens
  • 1 12  ounce  package frozen corn kernels, thawed (2 1/2 cups)
  • 1 10  ounce  package frozen lima beans or frozen sweet soybeans (edamame), thawed (2 cups)
  • 3/4  cup  half-and-half or light cream
  • 2  tablespoons  snipped fresh sage
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  ground black pepper
Directions

1. In a 12-inch skillet, cook bacon over medium heat until crisp. With a slotted spoon remove bacon from skillet and drain on paper towels; set aside. Add garlic to skillet. Cook for 30 seconds. Stir in the mustard greens, corn, and beans; cook and stir 3 minutes or until mustard greens soften. Stir in half-and-half, sage, salt, and pepper. Bring to boiling. Transfer to a serving dish. Sprinkle with reserved bacon.
