Quick Pickle Ribbons

Quick Pickle Ribbons
Ingredients
  • 1  medium  seedless English cucumber, unpeeled
  • 1  large  carrot, peeled
  • 1/2  of a small  onion, thinly sliced
  • 1/4  cup  snipped fresh dill weed
  • 1/2  teaspoon  coarsely ground black pepper
  • 3/4  cup  white vinegar
  • 1/2  cup  sugar
  • 1  tablespoon  kosher salt
Directions

1. Using a vegetable peeler, peel the cucumber lengthwise into long, thin ribbons. Repeat with carrot. In a large bowl combine cucumber and carrot ribbons, onion, dill weed, and pepper. Set aside.

2. In a small saucepan combine vinegar, sugar, and salt; bring just to boiling over medium-high heat. Pour immediately over vegetables, stirring to combine; cool. Cover and chill for 1 hour or up to 3 days.
