Roast Beef Quesadillas

Roast Beef Quesadillas
Ingredients
  • 1 17  ounce package  refrigerated cooked beef roast au jus
  • 3/4  cup  bottled chunky salsa
  • 1 1/2  cups  sliced sweet and hot peppers (2 yellow, 2 jalapeno)
  • 4  10-inch  flour tortillas
  •  Nonstick cooking spray
  • 3/4  cup  shredded cheddar cheese
  •  Fresh cilantro (optional)
Directions

1. Preheat broiler. In large skillet combine beef in its juices, salsa, and peppers. Cook, covered, over medium heat for 10 minutes, stirring occasionally to break up beef.

2. For quesadillas, spoon some of the beef mixture on half of each tortilla. Fold tortillas over meat, then fold in quarters. Place on a sheet pan lined with foil. Sprinkle cheese on each tortilla top. Broil 1 to 2 minutes or until cheese is melted and tortillas just begins to crisp. Top with cilantro to serve.

3. Quesadillas are a tasty way to use yesterday's roasted chicken, pork, or beefroasted in their own juices. For chicken and pork, substitute thick barbecue sauce for the chunky salsa.
