1. Coat a large skillet with cooking spray. Heat over medium heat. Add orzo; cook and stir for 3 to 4 minutes or until golden.
2. Coat a 4-quart slow cooker with cooking spray. In cooker combine orzo, turkey, broth, onion, cherries, lemon juice, garlic, pepper, and salt.
3. Cover and cook on low-heat setting for 2 hours.
4. Serve mixture on top of spinach. Sprinkle with cheese, almonds, and parsley.
