Double Berry Soup

Makes: 4 servings

Double Berry Soup
Ingredients
  • 2  cups  sliced strawberries
  • 2  cups  blueberries
  • 3/4  cup  orange juice
  • 1/4  cup  sugar
  • 2  cups  lemon or other citrus sorbet
  •  Fresh mint leaves (optional)
Directions

1. In a medium saucepan combine strawberries, blueberries, orange juice, and sugar. Cook over medium heat for 4 to 5 minutes or just until bubbly, stirring occasionally. Remove from heat. Let stand about 5 minutes to slightly cool the mixture.

2. Ladle the soup into 4 shallow dessert bowls. Top each with a scoop of sorbet. If desired, garnish with fresh mint.
