Greek Salad Club

Greek Salad Club
Ingredients
  • 6  flat pita bread rounds, halved horizontally and toasted*
  • 1 7  ounce container  purchased hummus
  • 4  romaine lettuce leaves
  • 1  large tomato, sliced
  • 1  yellow sweet pepper, seeded and sliced
  • 1/2  of an English cucumber, sliced
  • 2  ounces  feta cheese, crumbled
  • 1/4  cup  lightly packed fresh oregano leaves
  • 1/4  cup  purchased Greek vinaigrette dressing
Directions

1. Spread eight pita halves with hummus. Layer four of the spread slices with romaine, tomato, and sweet pepper slices. Top with four spread pita halves, hummus side up.

2. Layer cucumber, feta cheese, and fresh oregano. Drizzle with dressing. Top with remaining pita halves. Makes 4 sandwiches (4 servings).

From the Test Kitchen*To toast:
  • Preheat broiler. Lay pita halves, cut sides up, on 2 baking sheets. Broil 1 baking sheet at a time 3 to 4 inches from heat for 1 minute until toasted.
