Grilled Beef Tenderloin & Arugula Salad

Grilled Beef Tenderloin & Arugula Salad
  • 1  lemon
  • 12  ounces  beef tenderloin, grilled and sliced
  • 5 - 8  ounces  arugula
  • 1  bulb  fennel, thinly shaved
  • 1  bunch  asparagus, trimmed, grilled, and slightly chilled
  • 1  pint  grape tomatoes, halved
  • 1  red onion, sliced, grilled, and slightly chilled
  • 1/2  cup  low-fat feta cheese, crumbled
  • 3  tablespoons  olive oil
  •  salt
  •  pepper
  • 10  chives, chopped

1. Remove zest and juice from lemon, set aside.

2. In a bowl, combine beef tenderloin, arugula, fennel, asparagus, grape tomatoes, red onion, low-fat feta cheese, lemon juice, olive oil, salt, and pepper.

3. Top with lemon zest and chives.
