Pork and Peanut Burgers
Ingredients
  • 1/2  cup  finely chopped onion (1 medium)
  • 1/4  cup  finely chopped dry roasted peanuts
  • 1  tablespoon  snipped fresh cilantro
  • 1  tablespoon  grated fresh ginger
  • 3  cloves garlic, minced
  • 1  teaspoon  salt
  • 1/4 - 1/2  teaspoon  crushed red pepper
  • 1  pound  lean ground pork
  • 1  tablespoon  sesame oil (not toasted)
  • 1/3  cup  Asian sweet chile sauce or chile sauce
  • 1  tablespoon  creamy peanut butter
  • 1  clove garlic, minced
  • 1  cup  baby bok choy leaves
  • 4  Fried Wonton Wrappers* or French-style rolls or hamburger buns, split and toasted
  •  Chopped dry roasted peanuts
Directions

1. In a large bowl combine onion, the 1/4 cup peanuts, cilantro, ginger, the three cloves garlic, salt, and crushed red pepper. Add pork; mix well. Shape mixture into four 1/2-inch-thick patties that fit on the Fried Wonton Wrappers. Brush patties evenly with oil; set aside.

2. For sauce, in a small bowl whisk together chile sauce, peanut butter, and the one clove garlic; set aside.

3. For a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 10 to 13 minutes or until done (160 degrees F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as directed.)

4. To serve, place some of the bok choy on the Fried Wonton Wrappers. Top with burgers, sauce, additional peanuts, and the remaining bok choy.

From the Test Kitchen*Fried Wonton Wrappers:
  • In a large skillet heat 1/4 cup vegetable oil over medium heat. Cook four wonton wrappers, one at a time, in hot oil about 3 minutes or until brown and crisp, turning once. Drain on paper towels.
