Cajun Turkey Sliders with Spicy Remoulade

Cajun Turkey Sliders with Spicy Remoulade
Ingredients
  • 2  tablespoons  vegetable oil
  • 1  medium red sweet pepper, seeded and cut into thin strips
  • 1  medium yellow sweet pepper, seeded and cut into thin strips
  • 1  medium onion, cut into thin wedges
  • 1 1/2  pounds  uncooked ground turkey
  • 1/4  cup  chopped green onions
  • 2  teaspoons  Cajun seasoning
  • 1  teaspoon  bottled hot pepper sauce
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  ground black pepper
  • 12  whole wheat cocktail buns, split and toasted
  • 2  tablespoons  Old Bay® seasoning
  • 1  recipe  Spicy Remoulade
Directions

1. In a very large skillet, heat 1 tablespoon of the oil over medium-low heat. Add sweet peppers and onion; cook about 10 minutes or until very soft and tender. Remove from skillet; keep warm.

2. In a large bowl, combine turkey, green onions, Cajun seasoning, bottled hot pepper sauce, salt, and black pepper; mix well. Form into 12 patties slightly larger than the buns. Sprinkle both sides of each patty generously with Old Bay® seasoning.

3. In the same skillet, heat the remaining 1 tablespoon oil over medium heat. Add patties; cook about 8 minutes or until done (165 degrees F)*, turning once halfway through cooking time.

4. Serve in buns with sweet pepper mixture and Spicy Remoulade. Makes 12 sliders.

  • The internal color of a burger is not a reliable doneness indicator. A poultry patty cooked to 165 degrees F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty into the center of the patty.
Spicy Remoulade

Yield: 1-1/4 cups
Ingredients
  • 1  cup  mayonnaise
  • 1/4  cup  pickle relish
  • 2  tablespoons  capers, drained
  • 1  tablespoon  Creole or spicy brown mustard
  • 1  tablespoon  snipped fresh parsley
  • 2  teaspoons  bottled hot pepper sauce
  • 1  teaspoon  lemon juice
Directions

1. In a medium bowl combine mayonnaise, pickle relish, capers, mustard, parsley, bottled hot pepper sauce, and lemon juice.
