1. Spread cut sides of focaccia with mascarpone cheese. Sprinkle bottom half of focaccia with artichoke hearts and, if desired, capers; top with salami and arugula leaves. Add top of focaccia, spread side down.
2. Cut sandwich into thirds. Serve immediately or chill up to 4 hours before serving. Makes 3 servings.
