Stuffed Focaccia

Stuffed Focaccia
Ingredients
  • 1/2 9 - 10  inch  garlic, onion, or plain Italian flat bread (focaccia), split horizontally
  • 1/2 8  ounce container  mascarpone cheese
  • 1 6  ounce jar  marinated artichoke hearts, drained and chopped
  • 1  tablespoon  capers, drained (optional)
  • 4  ounces  thinly sliced Genoa salami
  • 1  cup  arugula leaves
Directions

1. Spread cut sides of focaccia with mascarpone cheese. Sprinkle bottom half of focaccia with artichoke hearts and, if desired, capers; top with salami and arugula leaves. Add top of focaccia, spread side down.

2. Cut sandwich into thirds. Serve immediately or chill up to 4 hours before serving. Makes 3 servings.
