Green Tomato Chow Chow

Green Tomato Chow Chow
Ingredients
  • 2  medium green tomatoes, chopped (1-1/2 cups)
  • 1  medium white onion, chopped (1/2 cup)
  • 1  small green sweet pepper, chopped (1/2 cup)
  • 1  cup  sauerkraut, rinsed and drained
  • 3  tablespoons  sugar
  • 2  tablespoons  white vinegar
  • 1  tablespoon  yellow mustard
  • 1/2  teaspoon  salt
Directions

1. In a large food processor combine tomatoes, onion, sweet pepper, sauerkraut, sugar, vinegar, mustard and salt. Process with several on/off turns until coarsely chopped. Transfer to a bowl. Let stand at room temperature at least 2 hours before serving or cover and chill for up to 1 week. Makes about 3 cups (24, 2-tablespoon servings).
