Tropical Fig Salad

Makes: 6 servings Yield: 6 side-dish servings
Tropical Fig Salad
  • 3  tablespoons  olive oil
  • 2  tablespoons  lemon juice
  • 2  tablespoons  chopped fresh chives
  • 1/4  teaspoon  ground black pepper
  • 1/8  teaspoon  salt
  • 6  cups  torn mixed salad greens
  • 6  fresh figs, quartered lengthwise
  • 1  medium mango, seeded, peeled, and cut into chunks
Directions For the vinaigrette::

1. In a screw-top jar, combine olive oil, lemon juice, chives, pepper, and salt. Cover and shake well; set aside.

2. In a large bowl, toss together greens, figs, and mango. Drizzle mixture with vinaigrette; toss gently to coat.
