Fast Nicoise Salad

Fast Nicoise Salad
Ingredients
  • 1  tablespoon  butter
  • 2  cups  refrigerated red potato wedges
  • 6  cups  packaged mixed salad greens
  • 2 5  ounce pouches  or cans lemon-pepper chunk light tuna*
  • 1  cup  cherry tomatoes
  • 1/3 - 1/2  cup  bottled roasted garlic vinaigrette salad dressing
Directions

1. Melt 1 tablespoon butter over medium heat in large skillet. Add potatoes. Cover and cook about 15 minutes or until golden, stirring occasionally.

2. Meanwhile, place greens on plates. Top with tuna, tomatoes, and potatoes. Drizzle vinaigrette. Season with salt and pepper. Makes 4 servings.
