Taleggio and Pear Panini

Yield: 4 sandwiches
Prep 20 mins Freeze 1 hr  1 Grill 7 mins  per batch
Taleggio and Pear Panini
  • 8  ounces  Taleggio or Brie cheese, rind removed if necessary
  • 8  slices  country-style Italian bread or artisinal whole grain bread
  • 1/4  cup  butter, softened
  • 1  medium  ripe pear, cored and thinly sliced
  • 3  tablespoons  honey

1. Place Taleggio in the freezer for 1 to 2 hours. Cut partially frozen cheese into 1/4-inch-thick slices; set aside.

2. Preheat an electric sandwich press, a covered indoor grill, a grill pan, or a skillet. To assemble sandwiches, spread both sides of each bread slice with butter. Place bread slices, a few at a time, in the sandwich press or indoor grill, cover, and cook about 6 minutes or until bread is toasted, turning if necessary. (If using a grill pan or skillet, place bread slices on grill pan. Weight bread slices down and grill until toasted. Turn bread slices over, weight down, and grill until remaining side is toasted.

3. Immediately top half of the bread slices with cheese. Layer with pear slices and drizzle with honey. Top with remaining bread slices. Return to sandwich press or grill pan about 1 minute or just until cheese melts. Makes 4 sandwiches.
