Bananas Foster

Makes: 4 servings
Serving size: 1/2cup ice cream + about 1/3 cup bananas

Bananas Foster
Ingredients
  • 1/3  cup  butter
  • 1/3  cup  packed brown sugar
  • 3  ripe bananas, bias-sliced (2 cups)
  • 1/4  teaspoon  ground cinnamon
  • 2  tablespoons  creme de cacao or banana liqueur
  • 1/4  cup  rum
  • 2  cups  vanilla ice cream
Directions

1. In a large skillet melt butter; stir in brown sugar until melted. Add bananas; cook and gently stir over medium heat about 2 minutes or until heated through. Sprinkle with cinnamon. Stir in creme de cacao.

2. In a saucepan heat rum until it almost simmers. Ignite rum with a long match (see photo, below). Pour over bananas; stir gently to coat. Spoon sauce over ice cream; serve immediately.

3. Makes 4 servings.
