1. Preheat oven to 400 degree F. In a large bowl, combine olive oil, butter, and rosemary. Add potatoes, onion, salt, and pepper. Toss to coat potatoes. Transfer mixture to a 13x9x2-inch baking pan.
2. Roast, uncovered, in preheated oven for 40 to 45 minutes or until potatoes are tender, stirring once. Transfer to a serving bowl. Makes 8 to 10 servings.
