Ginger-Pear Salsa

Ginger-Pear Salsa
Ingredients
  • 2  medium ripe pears, peeled (if desired), cored, and chopped
  • 1  small red sweet pepper, seeded and chopped (2/3 cup)
  • 1  medium fresh jalapeno pepper, seeded and finely chopped
  • 1/4  cup  snipped fresh parsley
  • 1  tablespoon  lime juice
  • 1  teaspoon  minced, peeled fresh ginger*
  • 1/8  teaspoon  salt
  •  Lime wedges (optional)
Directions

1. In a medium bowl stir together pears, sweet pepper, jalapeno pepper, parsley, lime juice, ginger, and salt. Cover and refrigerate at least 1 hour or up to 6 hours, stirring once or twice.

2. Serve salsa with cooked chicken, turkey, or pork. If desired, accompany with lime wedges to squeeze over each serving. Makes about 8 (1/4 cup) servings.
