Berry Good Banana Bread

Makes: 20 servings Yield: 2 loaves (20 servings)
Prep 15 mins Bake 350°F 45 mins
Berry Good Banana Bread
  • 1  package  2-layer-size white cake mix
  • 1 3/4  cups  mashed ripe banana (4 to 5)
  • 1 1/2  teaspoons  apple pie spice
  • 2  eggs
  • 1  cup  blueberries
  • 3/4  cup  dried cranberries

1. Preheat oven to 350 degree F. Grease bottom and 1/2-inch up sides of two 8x4x2-inch loaf pans; set aside.

2. In a large mixing bowl combine cake mix, banana, apple pie spice and eggs; stir until moistened. Beat by hand for 1 minute (batter will be lumpy). Fold in blueberries and cranberries. Spread batter into prepared loaf pans, dividing batter evenly. Bake for 45 to 50 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks. Wrap and store overnight before slicing. Slice each loaf into 10 thick slices. Makes 2 loaves (20 servings).
