Picadillo Chicken Pizza

Picadillo Chicken Pizza
Ingredients
  • 1 12 inch  Italian bread shell (Boboli)
  • 1 cup  bottled salsa
  • 1/4 teaspoon  ground cinnamon
  • 1/4 teaspoon  ground cumin
  • 2 cups  chopped cooked chicken or turkey
  • 1/2 cup  dried cranberries or raisins
  • 1/2 cup  pitted green olives, coarsely chopped
  • 1/4 cup  chopped red onion
  • 1 tablespoon  sliced almonds
  • 1 cup  shredded manchego or Monterey Jack cheese (4 ounces)
  • 1 tablespoon  snipped fresh cilantro
Directions

1. Preheat oven to 400 degree F. Place bread shell on a baking sheet. In a small bowl combine salsa, cinnamon, and cumin. Spread evenly over bread shell. Top with chicken or turkey, cranberries or raisins, olives, red onion, and almonds.

2. Bake for 10 minutes. Sprinkle with manchego or Monterey Jack cheese. Bake for 5 to 7 minutes more or until pizza is heated through and cheese is melted. Sprinkle with cilantro. Cut into wedges to serve. Makes 6 main-dish servings.
