Skillet Okra and Vegetables
Ingredients
  • 1  medium green sweet pepper, chopped (3/4 cup)
  • 1  medium onion, chopped (1/2 cup)
  • 2  cloves garlic, minced
  • 2  tablespoons  margarine or butter
  • 2  large tomatoes, peeled and chopped (2-1/2 cups)
  • 1/2  pound  okra, cut into 1/2-inch-thick pieces (2 cups)
  • 1  cup  cut fresh corn
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  paprika
  • 1/8  teaspoon  ground red pepper
  • 3  slices  bacon, crisp-cooked, drained, and crumbled
Directions

1. In a large skillet cook green pepper, onion, and garlic in margarine or butter until onion is tender but not brown. Stir in the tomatoes, okra, corn, salt, paprika, and red pepper. Cook, covered, over medium-low heat about 20 minutes or until okra is tender. Sprinkle with crumbled bacon. Makes 4 servings.
