Prep this roast in the morning and let it cook all day on low while you're working. Ranch Pork Roast will be a great dinner when you serve it with Green Beans with Shallots, Confetti Corn, and Green and Orange Salad. Keep canned soup on hand to make this slow-cooker roast whenever you want an easy meal.
Saute thinly sliced shallots in a combination of butter and olive oil until tender. Stir in hot cooked green beans.
Saute diced red and green peppers in butter and stir into hot cooked corn. (Use either canned or frozen corn.)
Add shredded or matchstick carrots to salad greens, then dress with a sweet dressing.
