Festive Pork Roast Dinner

Marinate Festive Pork Roast all day long or overnight, then roast while getting the rest of this fall-inspired dinner ready. Maple Roasted Acorn Squash Wedges, Wild Rice Blend with Pecans, and Brussels Sprouts with Lemon all are reminiscent of autumn, but can be served any time of year for a weeknight dinner that's also suitable for guests. Rice blends are a nice addition to any meal, any season.
Cut acorn squash into small, thin wedges. Toss with maple syrup and a bit of oil; season with salt and pepper. Spread on a foil-lined cookie sheet and roast in the oven at 375 degrees F. until cooked and browned, about 35 minutes.
Cook a package of wild rice blend according to directions. Stir in chopped pecans.
Steam brussels sprouts and drizzle with butter and a bit of lemon juice. Season to taste, adding a pinch of sugar if desired.
