Apricot-Glazed Pork Roast is a great way to pair fruit with meat. The glaze really sweetens this delicious roast. Add Ginger Tomato Soup, Rice with Snow Peas, and Hoisin Carrots to make a meal with Asian influences.
Using a garlic press, squeeze ginger juice to taste into hot chunky tomato soup. Garnish with chopped candied ginger if desired.
Cut snow peas crosswise into thin strips. Steam or cook in microwave and stir into hot cooked rice.
Cook sliced carrots in boiling water. Toss with a drizzle of Hoisin sauce, adding sliced green onions if desired.
