Weeknight Pork with Cranberry and Fig Chutney Dinner
Pork with Cranberry and Fig Chutney Dinner
- Pork Medallions with Cranberry and Fig Chutney (see recipe below)
- Ginger Broccoli
- Lentil Rice
- Peach Shortcake
Quick-cooking pork tenderloin slices make Pork Medallions with Cranberry and Fig Chutney a 20-minute entree. Serve it with Ginger Broccoli, Lentil Rice, and Peach Shortcake. Look for a box of lentil rice pilaf in the grains aisle.
Heat vegetable oil in a skillet and add grated fresh ginger. Cook 30-60 seconds and stir in drained cooked broccoli. Cook 1 minute more, then season with salt and pepper.
Look for a box of rice pilaf with lentils -- Near East is a good choice.
Using all-purpose baking mix, prepare shortcakes according to package directions. Fill with thawed, sliced, frozen peaches -- or fresh, if available. Top peaches with whipped cream.
